Our Head Chef Craig Newell has been Head Chef at the Butler Arms since 2011. Craig's career as a chef started as commie chef here at the Hotel in 2000, Craig went on to study Culinary Arts in Cork during his training in worked the Marborough House Hotel. Craig went on to work in Peacock Alley and Fitzer's on Dawson Street in Dublin. Craig returned to the Butler Arms in 2011 as Head Chef. He specialises in seafood and his Butler Arms Crabmeat Au Gratin is synonsis with regular customers that frequent the hotel and Fishermen's.
Craig enjoys using local produce from local suppliers such as Daly's Seafood, Quinlan's Seafood, Scariff meats and Bernard McCarthy fresh veg. Craig likes nothing more than to prepare and cook fish freshly caught by guests here at the hotel. Craig is married to our owner and Manager Paula Huggard and they have two children.
